On Thursday September 21st, a very famous food blogger named Pim, famous for Chez Pim, blogged about her favorite eggplant dish, Rena's aubergine in tomato sauce, Greek Style. Last night I decided to try it out. Pim recommends using "thin, elongated eggplants" however my local market was fresh out of Japanese eggplant. I used Italian eggplant instead. I also added some crushed red pepper as well as a little tomato paste. I'll definitely be making this again, it really was outstanding! My wife is my toughest critic, I know when something is good by whether or not she licks her plate clean. Her plate was spotless at the end of dinner last night.
