One thing that has always bothered me about soy, rice and oat milk is the horrific packaging. I now make my own oat milk incredibly easily, its just 1/3 oats, 2/3 water - combine and soak for 4-6 hours or overnight in fridge. In a waffle recipe calling for buttermilk, I use oat milk soured with a Tablespoon of fresh lemon juice. I also use oat milk instead of regular milk in muffins and pancakes. I have used oat milk with success in mashed potatoes along with some olive oil in place of butter.
